I've never been big on cooking or baking. When I do I really like it, but it's time consuming and has never been very high on my priority list in everyday life. Most of my cooking is easy and fast, but healthy. I enjoy my food way more if I know it's good for me as well. This year, I'm going to make more effort to be healthy and take the time to make it happen! So today's experiment was to make healthy pancakes for breakfast. And to our surprise, they tasted amazing!
For 1-2 persons:
It's easy and quick to make. Beat 2 eggs and add 1 mashed banana. Add a pinch of cinnamon, a tsp of chia seeds and an 1/4 tsp baking soda (or baking powder). Mix well and pour on to a coconut oiled pan. Top with fruits, nuts and honey and enjoy!
