Chickpea Tikka Masala

 As many of you know Iceland’s mens football (soccer) team was competing for the first time in a major tournament at the Euro 2016 in France. The nation was paralyzed and full of pride after amazing results! Families and friends gathered to watch the games together and me and Dagbjört were no exceptions there.

We love introducing our vegan and veggie lifestyle to other people and try to use every opportunity to do so. On game day I get really anxious and stressed so when we were going to cook for our family when Iceland was playing Ronaldo and all the other star players of Portugal, I knew we had to make something that was quick, easy and of course delicious. So we went with vegan Chickpea Tikka Masala.

ingredients

• 2 tablespoons coconut oil
• 1 large onion, fine chopped
• 5 cloves garlic, minced
• 2 inch piece of fine chopped ginger
• 3 cans (1200 g / 45 oz) chickpeas
• 2 cups sliced tomatoes
• 1 can organic full fat coconut milk
• 2 tablespoons Garam Masala
• 1 &1/2 tablespoon ground cumin
• 1 tablespoon paprika
• 2 teaspoons turmeric
• 1/2 - 2 teaspoons cayenne pepper (depending how spicy you want it)
• 3 tablespoons chopped fresh cilantro
• Salt and pepper to your taste
• 1 cup quinoa (we love using quinoa in stead of white rice, it’s delicious and so healthy)

 

Instructions

1. Add 1/2 cup quinoa and 1 cup of water into a saucepan and bring it to a boil. Once its boiling, reduce the heat and cover and let it simmer until most of the water has been absorbed. Usually it takes about 15-20 minutes for it to be ready.

2. Add the garlic, onion and ginger into a frying pan along with the coconut oil. Fry for 3-5 minutes, or until the onion is translucent.

3. Now add the tomatoes and let it all shimmer for about 5-7 minutes, or until they are mushy.

4. It’s time to pour the coconut milk, through in the chickpeas and add all the spices, except the fresh cilantro, we do that in the end. Bring to a boil and let it simmer for 10 minutes and then add the cilantro. Taste and add salt & pepper after your taste. We added a bit of spinach as well, but that's optional.
