Cucumber Avocado Rolls

Tasty Tuesday is a brand new weekly recipe section where we will explore healthy & easy to make, vegan and vegetarian dishes. 

I love cooking and even more than cooking, I love dishes that don't take over an hour to make! We like to move around a lot, some days we are working in downtown Reykjavik as baristas and others we hop between coffee shops designing and blogging on our laptops. Living a fast pace life often comes down on our diet, but we have slowly discovered more and more easy to make, yet delicious recipes that we want to share with you weekly here in Tasty Tuesday.

Cucumber Avocado Rolls


This week we are making delicious cucumber rolls filled with avocado.
Total time: 15-20 minutes – serves about 15 rolls.

Here’s what you need:

Ingredients

• 1 Avocado
• 1/4 Cup of Cilantro leaves (Basil leaves work great as well)
• 1-2 Cloves Garlic
• 2 teaspoons Lime Juice
• 1/2 teaspoon Salt (Add more to your tasting)
• 1/2 teaspoon Grinded Pepper (Add more to your tasting)
• 1 Cucumber
• Cayenne pepper or Smoked/Sweet Paprika for garnish



1. Start by fine cutting the garlic and cilantro and then add them with all the ingredients (except the cucumber and cayenne pepper / paprika) in a bowl and mash together until smooth and soft. Or just throw it all in a blender or food processing machine and make it do the work for you!
2. Use a potato peeler or a European cheese cutter to slice long and thin strips from the cucumber.
3. Spread a thin layer of the avocado mix on the cucumber strips and roll up. No toothpicks needed! Why? Because you’re just that awesome!
4. Now for some artistic and finishing touches, add some cayenne pepper if you like a little taste bud-punch or paprika.

Note that the cucumber waters really quickly so if you are bringing the rolls to a party, I recommend preparing the avocado mix beforehand and bringing a potato peeler and assemble the rolls at the party.

My top 5 travel destinations for 2016

After traveling in Asia and living in Bali we moved back to Iceland the summer of 2015. We enjoyed our travels and the excitement that comes with moving to a foreign country and experiencing new cultures. When we finally came back to Iceland, we felt how much we had missed having a place of our own, having a home. We were lucky to find the place we're living in now and for the first time in almost 8 months we feel the urge to travel again soon, feeling wanderlust!

wan·der·lust - /ˈwändərˌləst/. - a strong desire to travel.

Here are the top places I would love visiting in 2016!



#1 - Amsterdam, Netherlands.




Recently we have been looking at pictures of this beautiful city, and it has really captured our interest. We have often heard about the negative sides of Amsterdam, but once we started to dig deeper we soon saw that this city has so much more to offer! We really want to go there, rent bikes and experience the art & food culture there! Right now it's on the top of my list!



#2 - Paris, France.



Who wouldn’t want to visit the capital of romance, love and fashion?! It's long been a dream of ours to go there and that’s why it takes the number two spot!


#3 - London, England




We've never been to London and we have heard great things about it! It's relevantly cheap to fly there and it is a great place to start our travel and then head elsewhere. 



#4 - Melbourne, Australia


We are planning to visit Bali again sometime this year and it would be great to use the opportunity to visit Australia as one does seldomly travel to Australia if you live in Iceland. Also our Aussie friends have talked highly of this hipster city. The coffee and art scene is supposedly amazing!


#5 - Hong kong




We don't know much about Hong Kong but we are intrigued by their skyscrapers, fashion and mix of cultures found in one place! It's one of the main business centers in the world and even has Disney land. What more do you need...hehe.




I'm not sure we will be able to visit all these places this year and maybe this list will change, but for now these are the places I dream about going to! 2016 is going to be the best year so far I believe and I can't wait to see what it will bring our way.

Sometimes gray days are good for you

We’ve all had days where not only the skies are gray but we ourselves are feeling a bit gray as well. We’ve had a couple of those days last weeks and I’ve learned that it’s important to let yourself feel whatever you're feeling and to let down your guard from time to time, as long as you don’t camp out in that place for days!

It can be really tiring pretending that everything is OK and filled with rainbows when it's not. Let’s be real, rainbows don’t always come out on cloudy days. And it’s no different with us. We can’t access the joy of life and what it has to offer without working through our pain and sorrow first. Unresolved feelings, stress and pain will go unresolved as long as we pretend it doesn’t exist and sweep it under our imaginary carpet, which at first seems to be able to cover up every undesired thought and feeling. We probably all know that this “savior” of a carpet is no larger than a small handkerchief and the things we try to sweep under will always spill out in one way or another. It’s important to take time to let the feelings emerge, embrace them and let them pass. In my experience, it’s been invaluable to have a person that you can lean on and talk to when your not feeling that great and my wife has done a fabulous job at always being there for me! She’s my rock!

Last Sunday we were having the typical fall weather, and you guessed it, it was really gray! But what a beautiful day. It’s good to treat yourself on these days and even better, to enjoy the rewards of your process. And that's exactly what we did. This time I went with my beautiful wife to down town Reykjavik, where we treated ourselves with quality time together with a hot cup of cinnamon latte, strolling through our favorite parts of town.

How to make delicious veggie burritos

Making dinner after a long day isn't always what we look forward to the most, especially if the fridge is empty. I totally get that and I am often tempted to take shortcuts and order crappy pizza that makes me feel like a whale afterwards! Shortcuts are so often not worth it. But of course there are exceptions, sometimes we just need to let ourselves go and become whales that devour whole pizzaz and chocolate like we are feeding for the next 4 months. But normally that's not the case and that's why I love easy, fast and healthy recipes that only make me feel like a baby whale...that is awesome and in super good shape. (I think the whale and dolphin documentaries on Netflix have had more effect on me than I realized). 

We’ve been making veggie burritos very often lately and they have quickly become one of our favorite dinners to make. Today we decided to make delicious guacamole and fried vegetables, but we bought ready made whole flower tortillas, chunky salsa and chickpeas for our Mexican fiesta. So here’s what you need:

Guacamole:
- 2 ripe avocados
- 1/2 red onion (regular works fine as well)
- 1-2 teaspoons of lime/lemon juice
- 1/2 teaspoon salt
- 1-2 teaspoons of cayenne pepper (we like it spicy)
- 2 tablespoons cilantro (coriander for us scandinavians)
- A dash of freshly grated pepper
- 1/2 ripe chopped tomato

Mix and “voila”


Fried veggies:
Here we like to mix it up and we rarely use the same vegetables, but this is what we used today.
- 1 bell pepper
- 1/2 broccoli head
- 1/2 big red onion
- 4 garlic cloves 
- 8 small mushrooms

We cut the veggies into desired size, then fry on a pan on medium heat for 3-5 minutes and season with salt, pepper and cayenne pepper.

We also add fresh lettuce, rucola, spinach and chickpeas when we assemble our burrito.

There you have it! A healthy, fast and easy to do veggie burrito that will make both your face and body smile. Now who’s a happy, healthy baby whale? You are!
