Welcoming 2016 with style

Well, this blog is long overdue. December has been a real joy. And since we haven’t shared much lately, get ready for a bunch of new content. First of all I want to thank you all for the past year and wish you a happy new year! This past year has been one of our favorite so far. Living in Bali and then moving back to Iceland has brought us so many new friends and adventures to be thankful for.

We took some time off this Christmas, spent some quality time with each other, and friends & family. We hope everyone had a memorable time with their loved one's! I won't make this long, so for now, I just wanted to check in and share a few moments from our holidays.

Need healthy, warm comfort food? Try this (easy to make) Moroccan Chickpea soup!

It's been a while. We're already half way through November and Christmas is around the corner. We have slowly started to decorate our apartment and picking out our favorite Christmas tunes. Last year we celebrated in Bali, Indonesia, which was different to say the least. So this year we feel as if we can start celebrating earlier than usual and enjoy every bit of Icelandic Christmas we can! 

One of the good things about cold temperatures is all the warm comfort food. So today I wanted to share with you our new favorite recipe, Moroccan Chickpea soup! It's both ridiculously good and super healthy. My favorite combination. Packed with protein from the chickpeas and vitamins A & K from fresh spinach, this soup is packed with nutrients and healthy ingredients.

1-2 tablespoon coconut oil
1 large onion, diced
3 cloves of garlic, minced
6 cups cooked chickpeas, drained
2-3 cups of diced tomatoes
1 cup of chopped rucola
1 vegetable stock cube
1 teaspoon cinnamon
1 teaspoon cumin
1 teaspoon paprika
1 teaspoon cayenne pepper (less if you don't like it so spicy)
1 teaspoon salt
1/2 teaspoon pepper
3 packed cups fresh, roughly chopped spinach
Drizzle of extra virgin olive oil, optional

Melt the coconut oil in a soup pot on medium heat. Add onions and garlic and saute about 5-7 minutes, until onions are softened and slightly translucent. Add the chickpeas, tomatoes, rucola, spices and 2-3 cups of water. Stir to combine, and simmer on low heat for about 30 minutes. While simmering, wash your fresh spinach and roughly chop it into bite-sized pieces. When 30 minutes is up, taste a test bite and check the tenderness of the chickpeas. They should be soft, with a slight toothiness when bitten. If they're still a little firm, throw the soup on for another 10 minutes to soften them up. Once the soup is ready to be served, add spinach and stir. Serve with a drizzle of extra virgin olive oil. Enjoy!



Is snapchat really storing & selling our pictures?

I woke up today, got myself a cup of coffee, went back to bed and opened Snapchat. To my surprise, I couldn’t log in unless I accepted their new Terms and Conditions. Usually I would just agree without thinking about it, but it bothered me that their new terms were that important that they locked me out of my own account until I had agreed. So, unlike so many times, I actually read the terms I was about to agree to. 

"By accepting you grant Snapchat a worldwide, perpetual, royalty-free, sublicensable, and transferable license to host, store, use, display, reproduce, modify, adapt, edit, publish, create derivative works from, publicly perform, broadcast, distribute, syndicate, promote, exhibit, and publicly display that content in any form and in any and all media or distribution methods (now known or later developed). We will use this license for the limited purpose of operating, developing, providing, promoting, and improving the Services; researching and developing new ones; and making content submitted through the Services available to our business partners for syndication, broadcast, distribution, or publication outside the Services. Some Services offer you tools to control who can—and cannot—see your content under this license. For more information about how to tailor who can watch your content, please take a look at our privacy policy and support site.

Am I getting this right? So basically, what once was only a few second messages and snaps between friends and family is now not only their possession but it’s also being sold to their business partners for syndication, broadcast, distribution, or publication outside the Services! 

CREEPY! So, just keep in mind what you’re willing to share perhaps with the world wide web and what not. If I do agree to these strange terms, I’m going to make sure not to take any selfies, or I might just find my face in a spammy ad about "meeting sexy Russian girls" or something similar! Haha.
