Chickpea Tikka Masala

 As many of you know Iceland’s mens football (soccer) team was competing for the first time in a major tournament at the Euro 2016 in France. The nation was paralyzed and full of pride after amazing results! Families and friends gathered to watch the games together and me and Dagbjört were no exceptions there.

We love introducing our vegan and veggie lifestyle to other people and try to use every opportunity to do so. On game day I get really anxious and stressed so when we were going to cook for our family when Iceland was playing Ronaldo and all the other star players of Portugal, I knew we had to make something that was quick, easy and of course delicious. So we went with vegan Chickpea Tikka Masala.


• 2 tablespoons coconut oil
• 1 large onion, fine chopped
• 5 cloves garlic, minced
• 2 inch piece of fine chopped ginger
• 3 cans (1200 g / 45 oz) chickpeas
• 2 cups sliced tomatoes
• 1 can organic full fat coconut milk
• 2 tablespoons Garam Masala
• 1 &1/2 tablespoon ground cumin
• 1 tablespoon paprika
• 2 teaspoons turmeric
• 1/2 - 2 teaspoons cayenne pepper (depending how spicy you want it)
• 3 tablespoons chopped fresh cilantro
• Salt and pepper to your taste
• 1 cup quinoa (we love using quinoa in stead of white rice, it’s delicious and so healthy)



1. Add 1/2 cup quinoa and 1 cup of water into a saucepan and bring it to a boil. Once its boiling, reduce the heat and cover and let it simmer until most of the water has been absorbed. Usually it takes about 15-20 minutes for it to be ready.

2. Add the garlic, onion and ginger into a frying pan along with the coconut oil. Fry for 3-5 minutes, or until the onion is translucent.

3. Now add the tomatoes and let it all shimmer for about 5-7 minutes, or until they are mushy.

4. It’s time to pour the coconut milk, through in the chickpeas and add all the spices, except the fresh cilantro, we do that in the end. Bring to a boil and let it simmer for 10 minutes and then add the cilantro. Taste and add salt & pepper after your taste. We added a bit of spinach as well, but that's optional.

WIWT - Earthy tones with my brand new wood watch

Lately we have been making our apartment ready for the upcoming season, redecorating and making the patio gorgeous with plants and other colorful things. Now is the perfect time to “redecorate” the wardrobe as well! (actually every day is the perfect time for that, haha)

I have never been much for accessories, but we recently received amazing wood watches from JORD, and it has really changed that! I love the bright earthy color of the bamboo which makes it so easy to mix and match with a variety of outfits and adds a certain class to them!

Today, I wore one of my favorite sweater from Zara Men and my new wood watch from JORD.




Vegan Garlic Stir-Fry

Tasty Tuesday is back! We have made a small change to this section of our site, we will now be posting a new recipe every other week instead of every week as we have thus far been doing. Main reason being that we want to focus as much on lifestyle/fashion posts as we do on food/recipe posts. But don’t worry, we will keep giving you the best yummy and awesome recipes every other week. That being said let’s make something tasty!

One of my favorite ingredients to cook with is garlic. It’s just makes everything better! Yesterday I was thinking of what to make for this Tasty Tuesday and I was completely blank. We really didn’t know what to cook and after a long day I thought I would have to skip it this week. BUT, we managed to make a simple & delicious dish with garlic roasted veggies, and we love it! 

Prep time: 10 min  //  Total time: 15 minutes  //  Serves 2 persons


• 4 tbl spoons olive oil
• 8 cloves minced garlic
• 500 g / 32 oz mushroom
• half a head cauliflower, chopped into small bits
• 400 g / 2 cups cherry tomatoes, cut in half
• A handful of spinach and rucola
• Salt & pepper

1. Put the garlic and cauliflower into a frying pan along with the olive oil. Fry on medium-high heat for about 3 minutes or until the garlic starts to get a yellow/brown glance.

2. Add the cherry tomatoes and mushrooms and fry for 3 minutes or until the mushrooms are spongy and have decreased in size. Season with salt and pepper, you don’t need much.

3. Take the frying pan of the stove and then add the spinach and rucola and let it lay there for 2-3 minutes.

It’s that simple. Super easy, healthy and tasty.
